CULTIVATION AND CONFERMENT
The farmers cultivate and confer the raw material so that it can be processed in our factory.
We have a hulling plant exclusively dedicated to organic cereals.
We produce our whole grain flours from various cereals through an ancient stone mill, still driven by hydraulic power. The milling is one of the added values that distinguishes our products, as it allows the flour to maintain the nutritional and organoleptic qualities of the cereal.
Pasta is dried slowly, with hot air, in several stages and at natural temperatures, about 45 °, for 40 hours, according to the pasta shape. This treatment allows the pasta to maintain a very high content of precious substances such as vitamins and amino acids.
We have a roasting plant that exclusively works organic raw material, especially barley. After toasting, the next ginding, mixing and packaging phases are also performed internally.
