ROASTING The following are the strong points of our barley coffee (orzo): · The Cooperative’s members are the actual producers of the raw materials. Therefore, every step of the roasting process, from sowing to the marketing of the finished product, takes place within the Cooperative. · An old variety of barley of the highest quality, which was practically extinct, has been revalued and used again for the roasting process. · The roasting cycle in not completely automated, because a system’s operator controls its most important stage. Therefore, the orzo is always of better quality with the progressive experience of our operator. · After roasting, the successive stages (grinding, mixing, transport and packaging) take place in a sealed cycle with modern equipment, which prevents any type of external contamination. · We only package freshly processed products.
